Proxy server filtering

I am actually a comp sci student and hoped that one of you professionals could help me understand something:

When it's said the a proxy server will "parse" something what exactly does that mean?

It's in reference to an exam question that asks what a proxy server that performs request and response filtering will parse? You could help me with this as well if you like.
