I'm getting ready to start a hobby project where I'll want to capture video from several (6 or so) different cameras at one time and capture just one audio source. I would eventually like to create an application that controls all of the cameras input (on/off/modes) and output (viewing live footage, where to save video file, etc) so I'll need some kind of an API.

Does anyone have any experience with any such products?

I found cameras like this one online that output an RCA signal. I suppose I would need some kind of board/card that has several of these ports and an API. That's my best guess. Any help would be appreciated.
